TRY THIS SAUCE

OK, I have to come clean, this is Pineapple Willy's incredible rib sauce recipe: Try it, you will be amazed at the outcome....they took it off the website last year.  The restaurant is located in beautiful Panama City, Florida.  If you haven't been there, then you haven't been there.

1/2 large onion (Vidalia’s are the best for this), minced

4 cloves garlic, minced

3/4 cup Jack Daniel's Whiskey, (or Jim Beam, or whatever as long as there is an old white or black man on the label)  Don't skimp, spend the money, it's worth it.  As if any of my friends are going to let the rest just lay around the house.

2 cups Hunts ketchup, I don't make Teresa Heinz Kerry rich, do you?

1/3 cup white vinegar

1/4 cup Worcestershire sauce (Lea and Perrins preferred)  Once again, don't skimp, there are some nasty Worcestershire sauces being sold.

1/2 cup packed dark brown sugar

3/4 cup blackstrap molasses

1/2 tsp. fresh ground black pepper

1/2 tsp. salt

1/4 cup Hunts tomato paste

1 1/2 Tbs. liquid smoke, Hickory flavored.

1/3 tsp. Tabasco, or less

Combine onion, garlic, and whiskey in a 3-quart saucepan. Sauté until onion and garlic are translucent, approximately 10 minutes. Remove from heat and light mixture; flame* (let the stuff burn) for 20 seconds. Add all remaining ingredients. Bring to a boil, then turn down to a medium simmer. Simmer 20 minutes, stirring constantly being sure to scrape the sides and bottom to prevent the sugars from burning. Run sauce through a medium strainer to remove onion and garlic bits if you prefer a smoother sauce. Cool and enjoy.
